Microwave Christmas pudding

Now bring us some microwave Christmas pudding!

Treat yourself to this wonderful traditional dessert made in the microwave.


Ingredients

  • 200g/8oz flour
  • 150g/6oz fresh breadcrumbs
  • 200g/8oz suet
  • 900g/2 lbs chopped dried fruit, sultanas, raisins, currants, dates, apricots, etc
  • 3 teaspoons mixed spice
  • 1 grated dessert apple
  • 1 grated cooking apple
  • 1 grated carrot
  • 1 orange, grated rind
  • 1 lemon, grated rind
  • 4 tablespoons sweetener

Mix these ingredients above together in a large bowl

Beat together in a separate basin:

  • Juice of the orange and the lemon
  • Quarter cup of brandy
  • 2 tablespoons milk
  • 4 eggs.

Method

  • Mix the liquids thoroughly into the dry ingredients
  • Divide the mixture between 3 x 1 pint basins and 2 x three quarter pint basins, making 5 puddings in all
  • Cover each basin with cling film and pierce it once
  • Microwave individually on high [based on a 600 watt oven]
  • 5 minutes for the 1 pint size
  • 3 and a half minutes for the three quarter pint size
  • Stand for 10 minutes before turning out
  • Serve hot with custard or cream

Reheat an individual pudding for two minutes or one minute per portion.
