Low fat cheese cake

Try Sarah's delicious cheesecake

A great low fat cheese cake recipe that tastes so good you won't be able to tell.

Ingredients

  • Plain, orange or lemon flavoured (or Madeira) sponge cake
  • 200g/8oz low fat Quark or curd cheese
  • 3 tablespoons of low calorie sweetener or 50g/2oz of sugar
  • 2 eggs
  • 25g/1oz flour or cornflour
  • Rind of one orange or lemon, or vanilla essence
  • Reduced fat Greek yoghurt

Method

  • Slice the sponge cake and use it to line the bottom of a shallow, circular plastic or pyrex dish.
  • Mix together the cheese, sweetener or sugar, eggs, flour or cornflour, rind or vanilla essence.
  • Spread over the slices of sponge cake and microwave on high until just set (approx 4 minutes). It will continue to set in residual heat.
  • Carefully spread a thick layer of Greek yoghurt over the cheese mixture.
  • Microwave on high for 40-50 seconds.
  • Leave in fridge to chill.
  • Serve decorated with segments of orange (can be sprinkled with grated sugar free chocolate).
